
One of my favorite comfort foods especially one of the easiest to make is huevo en torta which means “egg pancake” in Spanish. I usually make this dish when I run out of ideas on what to make for family so I just go with the traditional huevo en torta. This dish is usually served with rice and beans, cheese, cultured cream, etc. A very special dish in Central American households!
You are going to start off with your ingredients which are:
Eggs– However many you want to use, I used 4 and it gave me two cakes.
Onion– Red or white, you can use either one, I used white to give a sweet flavor.
Jalapenos– Obviously you need some spice.
Salt & Pepper– For seasoning of course.
*The amount of these ingredients varies to how much or many you want to use.*
In a pan at medium to high heat add some olive oil (DO NOT LET YOUR OIL BURN). While the pan is sitting… grab your ingredients. Chop up the onion and jalapeno (however you like), in a bowl, crack open some eggs, season with salt and pepper, add in the chopped vegetables, and whisk with a fork.

Now you are going to pour your liquid in the hot pan. You are going to have to keep an eye your egg and check underneath it little by little to see if it is ready. Once you see a nice brownish- gold color it is ready to flip.

Once the other side is done cooking you can place your egg to cool, repeat with any left over mixture you have, or dig in and enjoy!
